Dr Lovedeep Kaur

Dr Kaur is working as a Research Officer at the Riddet Institute. She has also been appointed as an associate investigator in Riddet CoRE programme. Her research focuses on studying the effects of processing on structural and nutritional characteristics of food proteins and polysaccharides. She has developed an internationally recognised research program on meat structure and protein digestibility at the Riddet Institute since 2009. During 11 years of her research career, she has produced 55 publications that include articles in top-tier journals of the field, books and book chapters. She is the Co-editor of the book, “Advances in Potato Chemistry & Technology”, 1st and 2nd editions; published by Academic Press-Elsevier in 2009 and 2016. Her research work has received more than 3000 citations.
